Known as the most expensive coffee in the world, kopi luwak coffee comes from Indonesia, the third largest coffee producer on earth. To understand why kopi luwak is considered the world's most costly coffee, it's necessary to understand coffee in general, and the particular process that results in kopi luwak coffee.
Coffee experts know that the rich brown brew comes from the world's two sole varieties of beans: Arabica, a descendant of the original coffee trees that evolved in the cool, rainy, mountainous region known today as Ethiopia, and Robusta, a smaller, rounder coffee bean that adapted to grow in warmer locales closer to sea level. Among the world's biggest producers of Robusta beans is Indonesia, where kopi luwak coffee is made.
Robusta coffee trees get their name from their vigor when compared to Arabica trees. Robusta beans produce a beverage more bitter and with 50 percent more caffeine than Arabica coffee. So if Robusta beans are more vigorous, why is kopi luwak coffee so much more expensive than typical coffee? The answer lies in a natural process unique to this coffee specialty, one that involves a small animal called the Asian palm civet.
Civets love the bright red cherries produced by coffee trees, whether Robusta or Arabica. The animals are drawn by color and scent to select the richest, ripest, tastiest coffee cherries. They consume the fruit to nourish themselves. The coffee beans, however, are another story.
A civet's digestive system has a unique combination of enzymes that breaks down the proteins that create the bitterness in Robusta coffee. While the beans react to the digestive enzymes, the civet's body doesn't use them as food-derived energy. Instead, the animals excrete the beans, which are then gathered by coffee farmers, washed and sun dried thoroughly. Once the beans dry, light roasting at high temperature preserves the complex symphony of flavors of kopi luwak coffee.
This natural, unexpected collaboration between Robusta coffee trees and Asian civets is what makes kopi luwak the most expensive coffee in the world. Rather than collect the natural deposits of wild civets, Indonesian coffee farmers today keep civets in contained areas on their farms, and then harvest the seeds from the animals' deposits. The further steps in the process washing the beans thoroughly, drying them in the sun, roasting them carefully at high temperature to produce Cinnamon- or Medium-coloured beans all contribute to making kopi luwak coffee the world's best and most expensive.
Because of natural variations in the civets' diet, each batch of kopi luwak results in a unique flavor. While the flavors may differ, the gourmet quality of the most expensive coffee in the world comes from its unusual aroma, the unmatched smoothness of its taste and the underlying notes that identify its origins. These qualities combine to make kopi luwak coffee as close to priceless as any coffee in the world.
