Speaking of games which have lots of different combinations there is poker. The great thing about poker is that you never know what is going to happen. You can play tournaments or cash games. The other variety you have is to play different types of poker. A good poker game can last for hours.
If you have younger children and are trying to amuse them then you might like to try to have some sort of decathlon. The games can be ones you make up. Examples would be to see what is the most amount of stairs that one can climb down in one guy or using the laundry hamper as a hoop and trying to throw the socks into them.
